In the Middle Ages, everybody wore hats. Male and female, young and old, rich and poor, everybody had a hat or a hood or both, and I have even seen pictures of people wearing a hood, a coif, and a hat. I mean, without a hat, how could you tell Robin Hood from Link? Sims 2 has been out since 2004, and people have been playing Medieval games and writing Medieval stories (like the excellent Kingdom of Lothere) for nearly that long, and there's still a decided lack of Medieval haberdashery in general, much less really well-made stuff.
So I have made a list! And today I have decided to give that list its own post.
This is a database-slash-wishlist, because not only do I want to link to all the awesome hats that exist for Sims 2, I want to link to some of the awesome possibilities for hats that the Middle Ages could inspire, and... well, I kinda want to point out which hats exist, but could use an overhaul (or are historically inacurrate-- though usually I only complain when they're wildly inaccurate). If you know of any hats I've missed, please let me know! If you find inspiration in this list and decide to make a hat, especially an accessory hat, please let me know, because if you make it, I will recolor it. (I make no promises as to when, but I will recolor it.)
The Medieval Headwear Wishlist
Things that exist and work passably-to-awesomely:
Tressour Crispinettes (and hairstyle!) as accessories by FantasyRogue. These can be alpha-edited down into regular crispinettes, too. I have re-Pooklet'd the hairstyle for to bin it my way. You can find it by clicking the Hair Dump tag.

Africa Hair by Elena at Milano Sims, updated to go over the ears by Dicreasy. I have recolored this hair, check the Hair Dump tag (the link to the mesh is JUST a link to the mesh).
Hijab by ClubKitty, altered to fit Sims' shoulders better, animated, and age-converted by Marja. I plan to recolor this hair; meanwhile the brown recolor at that link works. (Hijabs are not particularly Medieval Western Europe, but with light linen recolors, they look a lot like wimples.) This is mesh is in the 14,000 poly range, use carefully. (A polycount reduction has been promised but as of this edit has not materialized. I have my fingers crossed so hard it's difficult to type.) After several months of absence from both me and Marja, I have gone ahead and recolored this hair. Hie ye hence to the Hair Dump tag; if it gets a polycount reduction I'll recolor it again.

Rus Leather Hat as accessory and as hair by Cynnix, accessory to fit over Cynnix's coif. Essentially the Happy Holidays Santa Hat without a pompom, I have done eighty-two recolors of this one for my Three Lakes Vikings. Click the Hair Dump tag.
Aligeth's Robin Hood Hat as accessory by G-Knee, in two heights; one to fit over Cynnix's coif and full hairstyles, one to fit over closer-cut hairstyles. Wear it with a coif to get proper hat chemistry! I did eighty-two recolors of this hat; check the Hair Dump tag.
Two Headwraps as hairs by Trapping; Hat Wrap Bangs has to show some of the hair, while Bundled Up Beanie can be alpha-edited into something kind of like a Saint Birgit's Cap only started lower on the forehead. I have recolored both of these hairs; click the Hair Dump tag to find them.
A Veil over a low bun as hair by Berg; Queen Victoria's crown is alpha-editable, making this an easy cross-class hairstyle. I have Pooklet'd this hair; check the Hair Dump tag to find it.
Executioner's Hoods as Accessories by Cynnix do not necessarily have the widest appeal, but might also be good for bandits.
TSM Physician's Hat as hair by Cynnix are much like the Bag and Square hats from Medieval Design.
Daislia's Jester Hood as All-Ages Unisex Hair by Cynnix not a usual sort of hat, but definitely has its uses.
TSM Quest Item Flower Wreath as accessory by Cynnix is absolutely darling. Definitely not an everyday item, but pretty for a peasant wedding or a feast day.
Things that exist, but aren't awesome one way or another:
Ugly Duchess (based on the painting of the same name, a woman wearing a heart-shaped hennin) as hair by Bipsouille. Technically this hair is a 'heart-shaped hennin' taken too literally (and badly mapped), plus the veil is not animated, and it was made as hair rather than as accessory so for every hat recolor you want to make, you have to do it five times to get all your hair recolors-- twenty if you're a devoted Project Mayhem user. (The original hair is made on top of the Base Game Low Bun hair; as an accessory, the hat could be made to fit that mesh, too.) Cynnix did post a mesh edit of this hair at Plumb Bob Keep; however, all she did was replace the lumpy, poorly-mapped heart with a smooth, well-mapped heart that supports patterned retextures a lot better-- the hat's biggest problems (lack of animation, the fact that the hat should have a flat top with the heart suggested by the drape of the veil, exposed hair) are still problems.
Male and Female Helmets from The Sims Medieval as accessories by Marja. Because I'd like to put them over the Sims 2 Store chainmaille coif, since it doesn't make much sense to protect your thick skull but leave your tender neck open to the breeze.
Horned and Veiled Hats as hairs by Bettye, part of the Midsimmer Night's Dream project. Veil is not animated, it's a hair instead of an accessory, and the hat itself is a misunderstanding of the structure of an attor de gibet. Likewise, the Chadar as Nun's Wimple in the same post is almost workable; it has teen and adult ages, but any extreme animation causes clipping and the mapping is something of a nightmare in terms of keeping fabric grain to scale.
Nun's Habit as hair by Rose. I was halfway to retexturing this one before I went to check out the animation in CAS. The veil is okay but the neck clips straight through in any movement that has a Sim tipping their head toward their shoulder.
Conical (French) Hennin as accessory by Rose. Appears to function okay in Body Shop, but the veil is draped improperly, the angle of the cone is too wide, and the hat doesn't fit the head well for most hairstyles that could be worn with a conical hennin (loose hair, high buns, anything tightly fitted to the head).
Toque from TS3 Ambitions as hair by Cynnix. It's cute, but there's way too much hair on the younger ages, the veils are improperly placed and not alpha-editable, plus it's a hair instead of an accessory, which makes for inconvenient recoloring.
Things that do NOT exist even after nine years, but should:
A Saint Birgitte's Cap as a hair. This is one of the more basic headcoverings a Medieval woman (married, or just older) would wear. She could wear it as-is, of course, or pin a veil to it, or put a hat over it. If you make this cap (and it could be made from the basegame Shorttuckin hair with very few mesh tweaks and a bit of de-animating; find rough draft here ), when I get my legacy started I will dub this hairdo a St. YOUR NAME's cap. This hairstyle is to women what a coif is to men-- ridiculously common. I want to Pooklet this one in at least four, possibly eight or twelve different linen colors.
Further variations on the theme of 'hood', preferably as accessories. Points and dags and long tails and whatnot; Ja's edit of Daislia's Altair hood could be used as a starting point.
Caps, for men, as accessories made to fit over Cynnix's male coif (or other similarly sized hairs. Making the bottom solid avoids gaps).
A torque (or toque) with alpha-editable veils as in FantasyRogue's Crispinettes, either as an accessory to fit over styles like the Basegame Low Bun or as a hair with no hair showing (for ease of recoloring). I prefer accessories because I tend to recolor hats like these in Pooklet's Project Mayhem naturals, Aelia's Autumn actions, and CurousB's Any Color You Like actions, for a grand total of eighty-two variations.
A heart-shaped hennin, as accessory to fit over styles like the Basegame low bun. I'm partial to the flatter shape, but the more pointed shape with the deep V would thrill me, too-- as long as you remember it is not a literal heart shape. (Bipsouille did make a literally-heart-shaped hennin based on the Ugly Duchess painting, but the heart shape to the hat in the painting is suggested by one corner of a frilled veil pinned to the front of he flat-topped hat.)
A flowerpot hennin, alpha-editable veils draped any way you please, as an accessory to fit over styles like the basegame low bun, please.
The Flemish hood, mistakenly done as a hairstyle in Sims Medieval, and again a good accessory meant to fit over things like the basegame low bun.
From Medieval Design, lots of excellent hoods (ideally as accessories), the Medieval Felt Hat as accessory, and 1490-1520 Hat, Wool Hat, and Straw Hat, as accessories to fit over Cynnix's male coif. (Yes, there are straw hat accessories out there. None of them have quite the right shape (there's one at All About Style that's close, but it's ENORMOUS). Cowboy hats did not exist in the middle ages.) June and July in the Tres Riches Heures calendar also shows some good examples of Medieval straw hats, and when they'd be worn.
An oval veil in the style of the Du Lac gown seen here on Revival Clothing; soft folds around the face and a circlet keeping it in place. This one would work either as an accessory to fit over close-fitting loose hair like the basegame Halo or Marja's Sims 3 Pulled Backhair, or as a hair with no actual hair showing (the veil solid rather than sheer and covering everywhere you'd see hair). I have seen the Sims 3 conversion, but it sticks out from the head strangely rather than being close to the skull the way a piece of fabric held on with a circlet would be. Here is another resource on how to practically wear a veil.
A Steeple (French) hennin, as accessory to fit over hairs like the base game bun-- the high bun with sticks, not the low bun-- or base game Halo hairstyle, fairly close to the skull. The veil should cover the hennin entirely, as seen here or here. The lappets (the drape covering the front of the hennin) are accurate to some times and places but not all, and so should be alpha-editable. Mini history lesson: although flowerpot and Burgundian hennins (like the Marie du Bourgogne version by Bipsouille) were popular in England and Burgundy, in France and elsewhere on the continent, ladies of fashion liked their hennins as a full cone, not a truncated one. The cone of a very fashionable lady's French hennin could be as much as a yard high. The Old French root word of 'hennin,' 'genhenner,' translates roughly as 'to inconvenience.'

A detail of a painting by Hans Holbein. You can see that the cone of the henin rises fairly smoothly along the cranium, although this lady has chosen a black band around the henin instead of lappets to show off her mad braiding skills.
And another detail, from a load of French (my URL tells me it is Meister des Jouvenil des Ursins). You can see the back of the henin here is close to the head, and this lady has chosen not to have any sort of band or lappets on her henin at all, probably to show off her high, plucked hairline.
I do know lappets were worn with steeple hennins; the first post here shows a noblewoman wearing an only slightly truncated steeple hennin with the same sort of lappets you'd see on Bipsouille's truncated/flowerpot/Burgundian hennin (scroll down to The In Thing). I'll admit I'm not entirely sure if the veil is supposed to go under or over the lappets. I can easily picture it either way, though for ease of alpha editing, veil over lappets probably works best. Usually, steeple hennins are seen without lappets, though sometimes with a band as in the Holbein image; the Fortune's Wheel picture in the same Medieval POC post shows Dame Fortune herself as well as another pair of ladies in line wearing their hennins without anything around the brim.
The little loop you see on all the ladies' foreheads is theorized to be part of some sort of wire underpinnings that keep most kinds of hennins (steeple, truncated, flowerpot, what have you) from toppling off a lady's head, because they're seen on pretty much every portrait featuring a hennin from the front.
And because I understand physical costume construction WAY better than meshing, that's about all I can help you with. I know somewhere in Medieval POC, there's another post about Dame Fortune and her wheel that has a larger copy of that image, but I'm not 100% sure where. I'll go digging for it if you want a closer look. If you've got more questions about the way the actual hats go together, hit me up and I will throw sources at you until the cows come home.
