I do give up sometimes-- when I just can't fix an alpha or when I realize a hair isn't going to recolor nicely no matter what I do or when I settle down with Body Shop to really get started and realize that the hair I'm thinking of working on is, in fact, fugly and I'd gotten a little excited over it, or that there's no way I can make a non-hand-painted texture work on it at all (there are a few Eastern-looking XM hairs that I may be giving up on for that reason). But by and large I do try! And I never seem to take a hair off my list without putting a new one on.
